Sometmes, when you are merging you format date cells in Excel and then when you merge the data with Word, it changes the date format. Why is this?

Thank you for your question. Can you check what format has been applied to the cells containing dates in your spreadsheet. For example are they date format, with UK locale? You can check this by right clicking on a date in Excel and choosing Format > Cells > then click on the Number tab.
If the Locale is not UK then you may find the dates changed when they are imported into Word (which uses your PC's Locale to determine the date).
I have found an interesting suggestion on a Microsoft Forum relating for forcing the date format in a Merge document. It does in involves editing the merge field codes.
