Can you be selective about which fields you include in an append query or do you have to take all fields in a table?

Yes it is possible to be selective about the fields you want to append. Please remember that the table where the records have been appended to ignores the other fields and leaves them blank.

Following is the example of appending certain fields from one table to another:
