how do I customise the coloured label in an appointment - I want to change the default name to one that I choose - i.e. vacation to half-term

In the Calendar view
Click the Edit menu / Label / Edit labels
Or
Click the Calendar Coloring button on the toolbar
Then click Edit Labels.
Type the text you want to associate with each color.
