Within the custom filter if you click the AND option you are imposing two conditions on your data, for example a number must be greater than this AND less than that. This option is generally used for numbers, the alternative is the OR option where you can say I want it to be "RED" and "GREEN" so only the RED and GREEN entries are returned. You cannot put "RED" AND "GREEN" because there are no cells that contain the words "RED" and "GREEN" together in the same cell.
