excel course in london - Formatting cells

We manually calculate staffs working hours and overtime from their clock cards. This is fine for standard hours for example 9am - 5pm. We have problems when we try to calculate for example 6pm - 4.30am. At the moment we go into format cells and then special and change the cells to hours and minutes. Help please!!
