I have done a bit of research for you on this:

You can save, copy, and move a data file (other than the file that is used as your default delivery location) to another location on your hard disk or to a share on the network. However, you must have folder read/write permissions to open a Personal Folders file (.pst).
A data file can be accessed by only one user or program at a time.
The .pst data file can be saved to read-only media such as CDs and DVDs. However, to use the .pst file, you must copy the file to your hard disk drive.
Warning Do not access an Outlook Data File (.pst) from a network share or another computer, because it increases the possibility of data loss.
I have also created a .pst on one of our laptops this morning, which is visible in my Folder list, as it should be but as with previous versions of Outlook, Folder permissions is greyed out which, together with the fact that it can be used by only one user / program at a time, would indicate a no go on this.
However, it might be worth talking to your Exchange Administrator to see if there is a Server based solution.

Many thanks for your lightening response! I have also played around this morning and have successfully created some .pst files and tidied up my inbox nicely. I will have a
chat with IT to see if we an expand on the sharing issue.

Just for info - I have not received any email from BSTL with login details etc although it seems I have been logged in by simply following the link in the notification email regarding this response. Should we expect an email with these details?
