Please provide more details about your query. When you say using Field Chooser for all folders what exactly do you mean?

Normally E-mail is different than Calendar so the fields will be different. Even within E-mail the Sent item folder will have different filed to say Inbox or Draft or Deleted Items so i don't see the relevance of having same fields in the various folders.

If your query meant something else please let me know and may be we can try to resolve it from that angle.
