How do I get a probabilistic schedule out of the software so that I see what the earliest and longest the project could be.

Hi Dominique

Your tasks in Project will probably already be set to start as soon as possible, so Project will try and show you the earliest finish date by default. To find out how long you can delay tasks without impacting surrounding tasks or the project itself take a look at the the Schedule table.
Right click on the select all square (above the row numbers and to the left of the column headers) and from the list of tables that appears choose Schedule. You will find the late start information calculated by Project.
